These gout-friendly Dubai Knafeh Chocolate Cookies combine indulgent flavor with mindful ingredients for a dessert that fits a balanced lifestyle. Great for those trying to follow a gout friendly diet while still enjoying delicious homemade treats.

Ingredients (8–10 cookies)

Cookie dough:

  • ¾ cup oat flour

  • ½ cup almond flour

  • ¼ tsp baking soda

  • Pinch of salt

  • ¼ cup coconut sugar

  • ¼ cup olive oil or melted coconut oil

  • 1 egg

  • 1 tsp vanilla

Green knafeh-style filling:

  • ½ cup kataifi (very finely chopped & lightly toasted)

  • 2 tbsp pistachio paste (keep light) OR sunflower seed butter

  • 2–3 tbsp mini marshmallows

  • Optional: 1 tsp honey

  • Optional (for color): matcha powder or natural pistachio blend

Instructions

  1. Make the filling

    • Toast kataifi in a pan with a little oil until golden

    • Mix with pistachio paste (or seed butter)

    • Fold in marshmallows (keep them soft, not melted)

    • Chill for 10–15 minutes so it firms up

  2. Make the dough

    • Mix dry ingredients in one bowl

    • Mix wet ingredients in another

    • Combine into a soft dough

  3. Assemble (key step)

    • Scoop dough and flatten

    • Add 1–2 tsp filling in the center

    • Wrap dough around it and seal completely

    • Roll into a ball

  4. Bake

    • 175°C (350°F) for 10–12 minutes

    • Slightly underbake for that chewy center

  5. Cool slightly

    • Let rest 5–10 minutes so the center stays gooey but set
